  1. Add almond meal to a small sauce pan then add the almond meal. Using a whisk, whisk until the mixture is free of any lumps.
  2. Put on stove top over a medium heat and whisk while it heats.
  3. When it starts to bubble at the edges or when you stop whisking, add the two cheeses and salt, keep whisking.
  4. Keep whisking for 2 or 3 minutes until the mixture thickens.
  5. Take off heat – Note the mixture will thicken even more while standing.
  6. Enjoy.
